I always have a jar of pickled onion in my refrigerator and I think you should too. Pickled onion makes food mouth-watering good. It provides a contrast in taste, texture, and appearance.

Always use red onion because you can't achieve this vibrant pink color and crunch with any other onions. Thinly slice your onion away from root to stem as this ruptures less onion cells, meaning less onion stench and it gives the slice a good texture and appearance when cooked in a hot liquid.
